1) Combine the flour with the baking powder and baking soda.
2) In a second bowl, whisk the egg. Add the sugar, yoghurt and oil and whisk vigorously.
3) Carefully fold in the flour mix until all the ingredients are just combined.
4) Fill your muffin tins half way up with dough and add 1 teaspoon of jam to each.
5) Add the remaining dough.
6) Bake the muffins at 175 °C for about 20 minutes.
